Ease of Resharpening: Unlike harder, highly wear-resistant steels (such as CPM S30V) which can feel “gummy” or stubborn to deburr, CPM SPY27 is designed to behave like an upgraded version of VG-10. It can easily be brought back to a hair-shaving, razor-sharp edge using basic ceramic rods (like the Spyderco Sharpmaker) or medium-grit stones without requiring specialized diamond abrasives.
The Strop Recovery Test: In standardized manila rope cutting trials, a CPM SPY27 factory edge dulled from its initial 178 BESS down to a toothy 378 BESS (working edge level). Without utilizing any sharpening stones or diamonds, the edge was fully restored to 179 BESS using only a leather strop loaded with a fine polishing compound. This represents a near-perfect recovery of the Factory Apex by Stropping Alone.
